The odour and flavour of yeast in a
wine or beer, but different according to whether the wine or beer is newly
fermented, when the yeast is fresh, or whether the yeast has autolysed, as in
an older wine. Generally regarded as a fault. See "autolysis". Yeast
contributes to the flavour of bottled beers, but may produce taints if the
strain is infected or unsatisfactory. |
